Mushroom Soup with Boursin Croutons

24 oz Imagine Organic Portabello Mushroom Soup or your choice of mushroom soup
salt and pepper to taste*
4 ½ inch thick baguette slices, cut on a bias
4 oz garlic and herb Boursin cheese
4 tablespoons chopped fresh chives
extra virgin olive oil*
4 large shitake mushrooms, sliced thinly
Preheat toaster oven. In a medium saucepot, heat the soup until simmering and season with salt and pepper, if desired. While the soup is getting hot, heat 2 tablespoons of olive oil in a small sauté pan until medium hot. Place the bread slices in the pan. Sauté for about 1 ½ minutes on each side or until golden brown and crisp on the outside. Season with salt and pepper. Spread each crouton with one ounce of cheese. Add 3 tablespoons of chives to the soup and stir in. To serve, ladle soup among 4 soup bowls and scatter in the raw shitakes and remaining chives. Drizzle the soups with some olive oil and lay one crouton on the brim of the bowl, sticking into the soup. Serve.
